M Resort Unveils $206M Expansion With New Tower, Emeril Lagasse Restaurant, Opening December 2025

The M Resort Spa Casino in Henderson, Nevada, is undergoing a $206 million expansion that will nearly double its room capacity. A new hotel tower is scheduled to open on Dec. 1, bringing the total number of rooms to 765. The project also includes the addition of the 15,000-square-foot Montese Ballroom, set to open on Oct. 1, 2025, and a new restaurant, Meril, operated by celebrity chef Emeril Lagasse, serving contemporary American cuisine.

The expansion was completed early, giving the resort the opportunity to pursue major events such as the National Finals Rodeo, New Year's Eve celebration, and CES. The M Resort is situated on almost 90 acres, providing numerous options including gaming, multiple eateries, a spa, fitness center, and a massive pool deck area., The expansion is expected to create approximately 120 new jobs.

PENN Entertainment, the resort's parent company, plans to secure $150 million in funding from Gaming and Leisure Properties, Inc. in the fourth quarter to support the project. This development is the second of four major growth initiatives by PENN across the United States, including new properties in Joliet, Illinois, and Columbus, Ohio, with additional projects opening later in 2025 and early 2026.

Meril will be the second location for Lagasse's New Orleans-style eatery, known for its warm atmosphere and globally inspired menu. The new addition enhances the M Resort's culinary offerings and is part of a broader strategy to increase amenities for guests and group events.
